Three Star Sustainability Champions

 

 

We take sustainability very seriously at Sam's and are proud to be a member of the Sustainable Restaurant Association. Sustainability is about us managing not only the financial but also the social and environmental impact of our business. We believe that by restaurants improving their sustainability, together we can make a huge difference on issues such as climate change, animal welfare and food waste.

In April 2013, the Sustainable Restaurant Association did an audit of our business and awarded us a 'One Star Sustainability Champion'. Although we are pleased that this rating recognises some of the work we have done, we know that there are still many improvements to make. Over the next year we pledge to:

  • Work towards sourcing more ethical meat, dairy and fair trade products
  • Explore the possibility of monitoring our waste and setting targets for reduction, as well as separating food waste so it can be processed off-site and kept out of landfill. 
  • Switch to suppliers that can provide more local produce in order to reduce our overall food miles.

The SRA recommended we develop a policy for catering for different dietary requirements and communicate this on our menus and through our staff. We are pleased to say that we are working hard on this and now feature gluten and dairy free dishes on our menu. 

From their audit the SRA found:

  • We have very strong seafood sourcing practices and that we opt to give importance to ethical sourcing standards by procuring free range eggs, pork, and poultry.
  • We heavily contribute to the local community through such initiatives as providing vouchers for schools and charities and providing a ‘Sam’s Local Business Discount Card’ for local businesses.
  • They commended us for our committed efforts to reduce the amount of food waste by offering doggy bags and takeaway containers for customers with unfinished meals and taking part in their 'Too Good To Waste' campaign.

Where possible, we try to source our ingredients from local suppliers. Here are just a few of our many favourites:

 

Macken Brothers

Chiswick's premier butchers, Macken Brothers, are a family run business located on Turnham Green. As well as supplying the restaurant daily with high quality meats, we often work in conjunction with them on various events such as our steak nights.

Macken Brothers pride themselves on supplying top quality, naturally fed meat sourced from the best suppliers from around the British Isles and Ireland. All their meat is aged on the premises which ensures it is tender and full of flavour when cooked. 

Their utterly delicious beef is all prime Aberdeen Angus cattle and is butchered on their premises in Chiswick. It is hung for a minimum of 14 days and is traceable right back to the farm it was reared making the meat of the highest quality.

Collins of Chiswick

Based on Chiswick High Road and just a stone's throw away from Sam's, Alfie and his team supply us with fantastic fresh fruit and veg on a daily basis and have been selling to Chiswickians for a number of years now.

 

Allan Reeder 

Having provided us with all our dairy needs since we first opened back in 2005, Allan Reeder, have a dedicated family run team that continue to make them the dairy supplier of choice for London’s top restaurants, hotels, bakeries and patisseries. Based just down the road in Acton, they supply consistently high quality dairy products, but also offer a knowledgeable service that’s always fast, helpful and reliable.

Browns Seafoods

Family owned, Browns Seafoods is based in Park Royal and was established in 1978 with the aim of providing the freshest fish available - direct from the coast to restaurants and caterers.

They buy their fresh fish from the major fishing ports on the British coast so at the restaurant we know we are always getting the best quality fish and seafood.

The Vintner

We work very closely with The Vintner wine merchants on both our wine lists and also on many of our wine tasting events.

Owner, Tom Gilbey, is a great friend of Sam's from university and has been involved with our list since day one, so is very familiar with what our customers like and don't like!

One of their aims is to demystifying buying great wine - making it accessible, informative and fun. All The Vintner team have fantastic palates and spend a large amount of time tasting and selecting new wines from all over the globe to keep their portfolio current and up to date.

Located in Fulham and founded in back in September 2010, The Vintner has made a firm mark on the London wine scene and now delivers some of the finest wines to London’s busiest restaurants, venues and homes.

Ellis of Richmond

Sam has known Charlie Boyd at Ellis for many years and used to buy wine from him before he set up Sam's. They have formed a friendship based on their shared passion for finding great wines for our customers and the occasional game of golf (which Charlie normally wins!) We can't thank Charlie enough for his enthusiasm for our business and continued support.

Action Graphics

Based in Twickenham, we have worked with Payam at Action Graphics since 2005. Payam designed and produces all our branded stationary at Sam's. The in-house creative team always produce highly original concepts and attention-demanding designs. They can source conventional and digital illustrations, photography and perform digital image manipulation and also have experience of producing reports & accounts, brochures, newsletters, leaflets, direct mail, logos, stationery, business forms and more..
